Ruby red in colour, with predominantly floral aromas of violet, iris, lily of the valley and peony. Its red fruit flavours are a remarkable expression of Gamay. Chiroubles is gourmet by nature, giving drinkers the pleasant sensation of sliding down the palate.

Vinification and maturing: The grapesare picked by hand and pressed immediately with the crémant program (long, lowpressure, with several rolls up). It will then be left for 36 hours in the coldbetween 4 - 5 ° C (39.2 – 41° F) then raised to 12 ° C (53.6° F) to carry outthe alcoholic fermentation. A final sterile filtration follows. It will thenundergo a drop in temperature between 2 – 4° C(35.6 – 39.2° F) in order toreveal the amyl aromas of Gamay such as red fruits. As soon as we reach 50 to60 grams of residual sugar, we will chill the wine at 5 ° C (41° F). Once thebottling is done, a second alcoholic fermentation will start, the latter isdone in bottles. As soon as the wine has reached 5 to 6 bars of pressure, thebottles will be ready to be disgorged.
Tasting notes : Acandy pink robe, with scents of fresh grapes and freshly picked red fruits. Inthe mouth, fine bubbles, a gourmet and refreshing mouth full of sensations. Amoment of pleasure to share as an aperitif or with a dessert.
